Chicken Alfredo Lasagna Roll-ups

Not only are these lasagna roll-ups pretty to look at, but they are declicious too! Impress your family and friends with this classy meal.

Chicken Alfredo Lasagna Roll-ups

  • Servings: Yield=7 lasagna roll-ups

Ingredients:

  • 7 lasagna noodles
  • 1 cup ricotta cheese
  • 1/4 cup frozen spinach, defrosted and water squeezed out
  • 1 1/2 cups grated cheddar cheese, divided
  • 1 cup cooked chicken, cut into small pieces
  • 8 oz. prepared alfredo sauce, divided
  • 1/8 tsp. red pepper flakes
  • 1 drop rosemary essential oil
  • 1 toothpick oregano essential oil

Instructions:

  1. Cook lasagna noodles according to package directions.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. In a medium-size bowl, combine the ricotta cheese, spinach, 1 cup cheddar cheese, chopped chicken, 1 Tbsp. of alfredo sauce, and red pepper flakes.
  4. Stir in the rosemary and oregano essential oils (dip a toothpick in the oregano oil, and then swish the toothpick around in the ricotta mixture).
  5. Take a lasagna noodle, and spread some of the ricotta mixture across it. Then roll the noodle up tightly, and place it, seam down, in a greased baking dish. Repeat until you have used all of the noodles and ricotta filling.
  6. Pour alfredo sauce on top of the lasagna roll-ups, and sprinkle the remaining cheese on top.
  7. Bake in preheated oven for 25–35 minutes, or until the roll-ups are hot and bubbly.
  8. Serve lasagna roll-ups with a garden salad. Enjoy!

White Chicken Chili

Warm up during the cold winter months with this healthy white chicken chili, infused with the health benefits of cumin, oregano, and lemon essential oils.

White Chicken Chili

  • Servings: 8

Ingredients:

  • 2 Tbsp. olive oil
  • 3/4 cup onion, finely chopped
  • 1/2 cup celery, diced
  • 4 cups cooked chicken, diced
  • 6 cups chicken broth
  • 3 cans white beans
  • 2 cans green chilies (4 oz. size)
  • 1 Tbsp. lime juice
  • 1 tsp. sugar
  • 1 tsp. ground coriander
  • 2 tsp. chili powder
  • Dash of cayenne pepper
  • 2 drops cumin essential oil
  • 1 toothpick oregano essential oil
  • 2 drops lemon essential oil

Toppings:

  • Crushed tortilla chips
  • Grated cheese
  • Chopped green onion
  • Sour cream
  • Cilantro
  • Avocado
  • Salsa

Instructions:

  1. Pour olive oil into a large pot, and brown the onion over medium-high heat. Add celery, and cook slightly.
  2. Add the rest of the ingredients (except for the essential oils), reduce the heat to low, and then let simmer for at least one hour. Remove from heat.
  3. Add essential oils, and let the flavors blend for at least 5 minutes before serving.
  4. To serve, place 2 Tbsp. of crushed tortilla chips and 2 Tbsp. of shredded cheese in soup bowls. Ladle in the soup. Top with additional crushed tortilla chips, grated cheese, green onion, sour cream, cilantro, avocado, and salsa. Serve immediately.

Homemade Pizza with Essential Oils

Really impress your family by making this delicious homemade pizza for dinner. The essential oils add such a nice flavor to the sauce that your family will surely be asking for more!

Homemade Pizza with Essential Oils

Ingredients:

  • Pizza dough (see recipe below)
  • Pizza sauce (see recipe below)
  • Mozzarella cheese
  • Canadian bacon
  • Pepperoni
  • Sliced mushrooms
  • Sliced olives

Instructions:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Roll pizza dough out onto a greased pizza pan or cookie sheet to make a crust.
  3. Spread desired amount of pizza sauce over crust.
  4. Sprinkle the pizza lightly with cheese.
  5. Layer Canadian bacon, pepperoni, mushrooms, and olives on the pizza.
  6. Sprinkle additional cheese over the pizza.
  7. Bake pizza for 15–20 minutes or until the crust is lightly browned on the bottom.
  8. Serve pizza warm.

Extra Idea:

Try different topping combinations on your pizza. Grilled onions, ham, pineapple, green peppers, and sausage are great topping additions/alternatives.

Pizza Dough

  • Servings: Yield=1 pizza crust

Ingredients:

  • 1 Tbsp. active dry yeast
  • 1 cup warm water water
  • 2 Tbsp. olive oil
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 1/2 cups flour

Instructions:

  1. In an electric mixer bowl with a dough attachment, combine yeast and warm water. Let sit for about 5 minutes, until yeast is dissolved.
  2. Add olive oil, sugar, and salt, and mix together.
  3. Add flour, and mix until ingredients are well incorporated and the dough is smooth.
  4. Let dough rest for 10 minutes before using.

Pizza Sauce

  • Servings: Covers one pizza
  • Difficulty: Easy

Ingredients:

  • 2 cups tomato sauce, unsalted
  • 1/2 tsp. garlic powder
  • 3/4 tsp. salt
  • 1 toothpick rosemary essential oil
  • 1 toothpick basil essential oil
  • 1 toothpick oregano essential oil

Instructions:

  1. Warm tomato sauce into a small saucepan over medium heat. Note: We used a homemade tomato sauce made from garden tomatoes. If you are using a canned tomato sauce, be sure to choose an unsalted version or else reduce the amount of salt you add.
  2. Add garlic powder and salt.
  3. Remove sauce from heat, and stir in essential oils. (Dip a toothpick in the essential oil, and then stir it into the sauce. Use a clean toothpick for each oil.)
